Ube Cheese Ice Cream


  • 740ml All purpose cream (chilled overnight)
  • 410ml evaporated milk (chilled overnight)
  • 390g condensed milk (chilled overnight)
  • 3 tsp Ube flavor
  • 4-5 tsp violet food color
  • 1 cup grated cheese
  • 1/2 cup grated cheese (extra for toppings)
  • 3 ice


  1. Freeze beaters for 15 min.
  2. Combine evaporated milk, condensed milk, ube flavor and violet food color. * Chill while whipping the cream
  3. Set up: place mixing bowl/big casserole over the ice and surround it with ice
  4. Whip cream for 10 minutes on high speed
  5. Gradually add milk mixture and whip for another 5 minutes
  6. Mix in 1 cup grated cheese (optional)
  7. Fill cups with ice cream mixture
  8. Top with extra garted cheese
  9. Cover and freeze overnight
