Mango Graham Cups

Ingredients:

  • 740ml All purpose cream (chilled overnight)
  • 410ml Evaporated milk(chilled overnight)
  • 390g condensed milk(chilled overnight)
  • 1 tbsp vanilla extract(optional)
  • 2 1/2 cups graham crackers, crushed
  • 1 stick butter /margarine, melted
  • 1/3 cup brown sugar
  • 5 tbsp gelatin, clear and unflavored
  • 1/3 cup hot water
  • 2 1/2 cups sweets mangoes

Procedure:

  1. Combine condensed milk, evaporated milk and vanilla extract. Mix well and chill
  2. Crust: Combine crushed grahams, sugar and melted butter/margarine. Mix well
  3. Place cupcake liners in a molder
  4. Add 1 tbsp of graham mixture
  5. Press it down to pack it tightly
  6. Chill for 15-30 minutes
  7. Combine Gelatin and hot water
  8. Mix well until it dissolves. Set aside
  9. Cream mixture: whip cream on high speed until cream is doubled
  10. Gradually add milk mixture and mix well
  11. Add dissolved gelatin and mix well
  12. Pour 1/8 cup cream mixture into each cup
  13. Add 1 tsp sweet mangoes
  14. Chill for 12 hours or overnight
