  • 1 kg whole chicken
  • 4 stalks lemongrass
  • 1/2 tbsp coarse salt
  • 1 tsp ground black pepper
  • 2 tbsp cooking oil

For the Marinade:

  • 1/2 cup soy sauce
  • 1/4 cup calamansi juice
  • 1/2 cup sarsa (Mang Tomas)
  • 1/2 cup Sprite or 7-Up
  • 2 tbsp garlic minced
  • 1 pc onion chopped
  • 1 tbsp ginger chopped
  • 3 tbsp brown sugar

For the Sauce:

  • 1 1/2 tbsp cornstarch
  • 1/2 cup sarsa (Mang Tomas)
  • 1/2 cup water
  • 1/4 cup brown sugar
  • drippings from the roast chicken


  • Mix the whole chicken with the soy sauce, calamansi juice, sarsa, Sprite/7-Up, garlic, onion, ginger, and brown sugar.
  • Marinate overnight in the ref.
  • Preheat oven to 350 F.
  • Stuff the chicken cavity with lemongrass and rub salt, pepper, and oil all over the chicken.
  • Pour the marinade inside the chicken then place the chicken breast side up in the oven (or place in rotisserie) in the oven.
  • Bake for 1 1/2 to 2 1/2 hours or until juices run clear.
  • Prepare lechon manok sauce by heating the drippings with cornstarch, sarsa, water, and brown sugar.
