Jelly Flan

Ingredients:

For the Flan:

  • 4 large eggs
  • 410ml evaporated milk
  • 300ml condensed milk
  • 25g yellow unflavored gulaman
  • 1 cup white sugar (more if needed)
  • 1 tbsp vanilla extract
  • 4-5 cups water

For the Arnibal/Caramelized Sugar:

  • 1 1/3 cups sugar
  • 3/4 cup water

Procedure:

For the Flan:

  1. In a bowl, beat eggs
  2. Add evaporated milk, condensed milk, sugar and vanilla extract. Mix well.
  3. Strain the milk mixture
  4. Let it rest for 15 minutes
  5. Heat Off: Combine gulaman powder and water
  6. Stir constantly until gulaman dissolves
  7. turn the heat on and bring to a simmer.stir constantly
  8. Add milk mixture and continue stirring
  9. When the mixture is about to boil turn the heat off
  10. Gently pour the gulaman mixture into the molders
  11. Set aside and let it firm

For the Arnibal/Caramelized Sugar:

  1. Melt sugar. *Continue stirring
  2. Slowly add water and continue stirring until slightly thick
  3. Pour a spoonful of caramelized sugar over the gulaman flan
