Ingredients:
- 6 cups green papaya, grated
- 3 cups white vinegar (cane vinegar, apple cider vinegar, coconut vinegar)
- 2 1/2 cups sugar
- 1/4 cup salt
- 1 tbsp black pepper
- 1 medium sized carrots, sliced thinly
- 2 medium sized onions, sliced
- 1 small sized ginger, julienned
- 1 red bell pepper, julienned
- 25 grams raisins (optional)
Procedure:
- Combine green papaya and salt
- Mix until the salt dissolves
- Squeeze out the liquid from the papaya and set aside
- Combine vinegar and sugar. Mix until the sugar dissolves
- Cook over medium heat until the vinegar is cook.
- Add the vegetables and pepper
- Bring to boil and cook vegetables for 30-50 seconds
- Then pour the hot syrup directly into the papaya
- Add the raisins and mix until just combined
- Cool a bit and transfer the atchara to the sterilized jars.
- Refrigerate for 1-2 days so the flavor will develop
